Doubled it: Modified thus:

Stuck with one pound of shrimps. Added one pound of chicken breasts, sliced into strips.

Can't get genuine andouille sausage, but my butcher Fred makes the most awesome Cajun brats, ever.

Doubled recipe calls for 4 tbs of paprika. But grocery-store paprika is little more than food coloring. I used 2-1/2 tbs of authentic smoked Spanish paprika from Penzey's Spices. That was plenty!

I used long-grain white rice, because I didn't have any brown rice.

It went very well with every beer I had in the house.

I went to my in laws Anglican church and had pancakes, eggs and sausage. I miss Fastnachts from my PA German tradition.
It’s almost believable, but I love it most of the time whether it’s true or not.

We went down the street to the neighbourhood Anglican church for pancake dinner tonight. I take that out of our charitable giving budget line, not restaurants, right?

So Fat Tuesday ended approx. 9 hours ago and already it's faded into History. Except for the going to the gym part today. LOL!

Living down in Mobile, AL, the birthplace of Mardi Gras (yeah, we were doing it before New Orleans made it cool), my Mardi Gras involves getting two days off of work and staying the heck away from downtown. We don't even get mail delivered on Mardi Gras!

I spent the long weekend spending extra time with the kids, puttering around in my workshop, and working on some ongoing writing projects. And, of course, smoking a pipe. But that goes without saying around here, right?
