I am looking forward to smoked turkey soon.

And I plan to turn the carcass into a whopping batch of turkey gumbo!

I have been making batches of smoked chicken stock from the bones (and smokey wing tips) of PBC chickens. It is awesome to have on hand for soups, stews, & gravies.

I did a pork loin and three slabs of ribs over the last couple weeks. Finishing off the last of the ribs for lunch today.

I'm firing it up Sunday just for my mom. She loves my Pit Barrel chicken. For her, I simply dust-up the yard bird with some lemon pepper and hang them in the cooker. Boom, she thinks I'm the best cook in the world.

Earlier today I brined the turkey:

Fancy Brine
  • 1 cup sea salt
  • 2 quarts of apple cider
  • 6 cloves of garlic, peeled and crushed
  • 4 jalapenos, roughly chopped
  • 1 gallon cold water
The turkey is brining in the cooler while awaiting its fate tomorrow afternoon.
