Does anyone here actually make their own tortillas? Corn or flower, doesn't matter, but quesadillas have cheese. Lots of cheese. Tacos don't come with shredded cheese or cream cheese. Just sayin.

Great observations, both of you. I've tried all forms of tried and tested ingredients and even sought help from a seasoned vet like Fred mentioned. She winked at me and said gringos just don't have the touch. I think she's right.

My speciality is highland cheddar, mozzarella, gouda, jalapeño, shredded chicken, and habanero BBQ sauce. Put a little olive oil in the skillet before cooking. Crispy, cheesy, and BBQ-ey.

Being from a different tradition, my left over ingredients have either gone into various pastas or hashes. Quesadillas are an interesting alternative.

Perhaps the best thing about quesadillas (other than the sound of the word itself) is that you can load them up with all sorts of things for yourself and make 'plain' ones with just cheese if your kids are picky eaters. Unless the kid is a freak, he'll eat a quesadilla.

Today I opened the fridge, threw together a quesadilla with fiesta cheese, some week old breakfast sausage, and salsa, it ain’t always pretty, but it gets the job done.

Geezer Alert.

1980. Westminster, California.

I was at <dude's name> house, one day; hereafter known as Dude. He had a pool; it was summer. He had been treating me like dog poo stuck in the waffle of a boot for about 2 years. I was cautious at his recent turn to friendliness. But, a pool is a pool. Late lunch one day we're making quesadillas. We build our quesadillas and he heated his first. When done, it was my turn to turn and burn.

They had an electric stove. I only had experience with gas. I'm trying to get it figured but, in 1980 I am a more of a total dorkenhiemer than appears before you now. I blast the stove top to max plus ten and toss in my pre-built quesadilla. I don't recall what all it had in it. But I do recall it being beefy and cheesy.

When the melty cheesy goodness was at the apex of perfection, I quickly moved the product into a normal mass quantities consumption container. Then I turned the burner to MAX EFFING ON. Thinking it was off. I did not remove the pan from the burner that was now on target to reach the temperature of the surface of the sun in exactly 13 minutes.

I join Dude in the den where the TV is and the door to get back out to the pool.

We watch whatever and munch our grub like starving dogs.

Time to take plates into the kitchen and clean up.

HOLY COITUS! Dude screams.

The Quesadilla pan is smoldering and smoking as it rests on a heater set to Sun+10.

WHAT THE <zederated> DID YOU DO?

I quickly grabbed the pan off the stovetop and thrust it into the sink area while flipping the water on full blast, not caring whether it was cold nor hot, nor any combination therein. For it mattered not.

Steam filled the kitchen in a loud hissing sound that grew quickly into Tornado Siren levels.

Then the pan groaned.

And then the pan buckled.

It was a haunting tormented twisting sound that deafened all other sound around it. Dude then exclaimed, THAT IS MY MOM'S FAVORITE PAN! WHAT IN THE <zederdated> IS WRONG WITH YOU?!
