What have you put in them?

My most recent iteration has included brisket, salsa, and fiesta blend cheese with ranch dip on the side.

Did another one the other day with ham, spinach, and provolone.

Almost any combo of meat and cheese works in a pan fried tortilla lol

Grilled chicken, monterey jack, green chilis - it's kind of an enchiladilla.

As it happens, my day job this week has me preparing the preliminary designs for an expansion of a tortilla plant where they will make uncooked, frozen tortillas, similar to the 'take and bake' breads, pizzas, and pies that are now on the market. I can't wait. Toss those babies in a pan with some cheese, onions, mushrooms, and pulled pork and then top it with a fried egg. Oh baby.

I have long thought that most tex-mex food was but a variation on the burrito.

We have quesadilla parties as family get-togethers now and then. It's easy to make everyone happy and can be done on the cheap. I set out a bunch of stuffings, plug in a couple of electric griddles and everyone makes one their way. Good, clean fun.

There's a local food joint here on the moonbase with a really cool waitress that I will see on occasion.

When she asks what sounds good on the menu, I reply "Gimmie one of them chicken case-a-dillas"

She cracks up laughing. Whether or not it's genuine laughter matters not. I crack myself up.

I mean, I'm a Spanish teacher so I'm well aware that there is a lot more to offer from Mexican Cuisine than your average east coaster is aware of, but still, I likes me a dang quesadilla...

I've not made a quasdilla in a long time. But, if there was a few days off on my weirdo diet thing, Then I would have a long weekend where all invited would share and participate in the quesadilla fest.

Flat iron gills hot and ready the whole time. What do you want in your quadilla, sir? Whatever dork in questions says. Well yes, sir. Would you like to wait or may we bring it to your table?
