Absolutely. I resisted the urge to be me and followed the PBC video. It worked perfectly.

Here is a great, quick video on how to carve a turkey.

For decades, I carved breast slices off the carcass just like Dad showed me. The result was tough, chewy, and dry. I always figured that's just how turkey breast was supposed to be. It was okay -- with enough gravy.

Now we remove the whole breast and cut thick slices across the grain.

Then remove the thigh bone and slice it across the grain as well.

This results in medallions of tender, juicy, cut-with-a-fork turkey.


I felt stupid, taking so long to learn how to serve a turkey well. Hope you young'uns learn better'n me.

Today, I will be smoking some pork and green chili sausage, hot Italian sausage, and German jalapeno sausage. I will also be grilling some veggies.

I am boiling the carcass & smokey wingtips from my Pit Barrel turkey to make a stock.

Then I'm gonna make a turkey & sausage gumbo.

There is an 11 lb pork loin in the PBC even as I type this. It is going to a Christmas party tonight.

I am also going to make green chili mac and cheese. If I have time, I may smoke it a bit as well.

I am smoking a beef brisket to take to the family gathering in Missouri.

And a couple of chickens for Christmas dinner in Wisconsin.

Brisket is ready to wrap. Will finish in the oven. (After the brisket is wrapped in foil, it doesn't make any difference where the heat comes from.)

Chickens are ready to hang.

Mrs. Del has ordered a New England clam chowder with Christmas dinner. So I've got that going on too.

Today is Mrs. Del's birthday. She wanted grilled steaks. Pipeson and I dusted off the trusty Webber grill.

Got to take long, loving look at the PBC. Soon... very soon!

I called the butcher and ordered a box of pork spareribs (about 40 lb) for Memorial Day.
