I forgot to report about some epic pork loins I did on the PBC last weekend. Even though it was frigid and raining, I still think they took longer than they should have. I wonder if my little air intake setting is in need of some adjustment.

My young friend Steve saw my PBC, and it was love at first sight.

He bought one for himself a few seasons ago, and has gone totally tuttle over it.

He is smoking 28 lb of pork shoulder, to be shared today at the closing party of our 40 Days For Life vigil.

I am making El Rojo Pollo today:
  • 5lbs of chicken breasts, smoked
  • Half of a white onion, smoked
  • 3 ripe (red) jalapenos, smoked
  • 1 bulb of garlic, peeled and smoked
  • 1 red bell pepper, smoked
  • Various secret spices
  • A good white Zinfandel
  • Baby Ray's BBQ sauce
Smoke the ingredients, put in a Croc Pot on low, shred everything, add BBQ sauce, wine, and spices, and cook for 2-3 hours. Serve on buns (usually those Hawaiian rolls in the UB casa) and enjoy!

My buddy did the cook. I didn't ask.... I know that he cooked the ducks whole (not split).

PBC video does not specify how to hang it. Looks like a single hook through the breast.

PBC recipe also says 140°F, but that has to be a typo. 165°F, at least.
