This thanksgiving we'll be eating Pit Barrel Turkey :chili:
I did two 12 pounders in mine last year. Best turkey I ever cooked. Heck, it was the best I ever ate period.
Did you do both at the same time?

Absolutely. I resisted the urge to be me and followed the PBC video. It worked perfectly.

Here is a great, quick video on how to carve a turkey.
https://www.realsimple.com/food-recipes ... rve-turkey

For decades, I carved breast slices off the carcass just like Dad showed me. The result was tough, chewy, and dry. I always figured that's just how turkey breast was supposed to be. It was okay -- with enough gravy.

Now we remove the whole breast and cut thick slices across the grain.

Then remove the thigh bone and slice it across the grain as well.

This results in medallions of tender, juicy, cut-with-a-fork turkey.

I felt stupid, taking so long to learn how to serve a turkey well. Hope you young'uns learn better'n me.

Then I'm gonna make a turkey & sausage gumbo.

There is an 11 lb pork loin in the PBC even as I type this. It is going to a Christmas party tonight.

I am also going to make green chili mac and cheese. If I have time, I may smoke it a bit as well.

Busy weekend at the Pit Barrel.

I am smoking a beef brisket to take to the family gathering in Missouri.

And a couple of chickens for Christmas dinner in Wisconsin.

Brisket is ready to wrap. Will finish in the oven. (After the brisket is wrapped in foil, it doesn't make any difference where the heat comes from.)

Chickens are ready to hang.

Mrs. Del has ordered a New England clam chowder with Christmas dinner. So I've got that going on too.

Today is Mrs. Del's birthday. She wanted grilled steaks. Pipeson and I dusted off the trusty Webber grill.

Got to take long, loving look at the PBC. Soon... very soon!

I called the butcher and ordered a box of pork spareribs (about 40 lb) for Memorial Day.

Mine slept through the fourth. There's nothing sadder than unrealized potential.

I was in a cookin' mood yesterday, so I made some chicken stock.

In a big freezer bag, I've been saving all the bones and spines and giblets from all of the chickens we smoked in the PBC this summer. I dumped the whole bag into a stock pot with some onion tops and carrot roots, a few stalks of celery and a crushed garlic clove. A sprinkle of thyme and sage and a few whole peppercorns. Enough water to cover everything, and just let it simmer on the lowest possible heat setting for about 4 hours.... simmer very low, so you can see the individual bubbles breaking the surface. No salt (that's for the recipes later), but maybe there was a dried chili pepper in there.

The real treasure are those smokey wing tips! You can't eat them, so they are still richly covered with that smoke flavor. You can smell it as the stock simmers.

Making a soup or gumbo out of homemade stock from the PBC is a special touch that you just can't get from store-bought.

If we ever spend some time together, let's just cook something. Okay?

I was talking with a young friend (a nine-year-old girl) after Mass today.

One thing led to another..... and now we are hosting a sparerib barbecue party for 24 people on October 7, to remember the Battle of Lepanto.
