I favor stuffing.... but it isn't Thanksgiving Meal without some essentials.

I have a whole cook book on the family sides. Mmm mmmmm.....


Small secret on the stuffing: water chestnuts (finely diced) and pecans (finely diced as well) with turkey stock. Texture, flavors and don't forget to put it in the oven to get the top dried while the middle and bottom remain moist.

Stuffing/dressing. I dig oysters in it, but I'm the only one in my family with excellent taste. My mom's is light bread dressing is best, obviously, but my MIL made cornbread dressing that would hurt you (in a good way). I really miss that woman.

If we could cast two votes I'd also say cranberry stuff, also. The cheap stuff out of the can is best, but I'll eat anything cranberryish. I put that junk on everything.

Here's a try on the cranberry.... crush them suckers and throw them in with raspberries (or blackberries... or both!) and add sugar to sweeten. Let this puppy set... like make it tonight (I know I am). It's amazing. Test it for taste tomorrow morning..more sugar... and then on Thursday morning (maybe even a little more).

The family used to have one of these... I'll be using a food processor to crush the suckers:

Do any of you make any special sides or dishes representing your ethnicity?

We make bollito misto and often stuffed shells as side dishes.

The Turkey was a relatively recent addition in my father's family.

My kiddos are all doing Thanksgiving without mom and dad this year. They've already started texting about all the traditions and dishes they'll miss. We make a dish we call "Sonja's Potatoes" because an old neighbor turned us on to them. "Dad's Cornbread Casserole" is a must have also. Daughter #2 started a google doc to gather family recipes.

Potato filling. It’s a Pennsylvania Dutch thing. Really it’s just mixing mashed potatoes and stuffing then baking it casserole style. These days in California where no one ever heard of it, I just mix the two one forkful at a time. Pretty close approximation.
