I was really happy when I learned how to "blacken" meats and fish. It is much healthier and tastier than simple frying. It makes amazing smells and amazing mess.

The basic process:

1) Open windows and turn the stove fan up high.

2) Get the cast iron pan really hot.

3) coat the meat with a spice rub

4) Throw down a generous pat of butter, drop in the meat, and get a lid on it.

- Don't fret if it flames up a bit.

5) Give it time for the flavorful crust to develop.

It takes a bit of practice to get the crust right and to avoid over-cooking the meat. But even your worst mistakes are still delicious!

My step dad cooked tenderized flank steak this method....SO GOOD!

If you love eggs over medium with slow running yokes as much as I do, use a good Teflon skillet and warm it slowly with a bit of oil. The eggs come out super tender with no burned edges. After turning, shut off the heat and let them rest in the skillet a little while. Perfect.

Eggs daily here. I like my eggs tender with no crispy edges and a slow, runny yolks. My method is a granite coated skillet, low heat, and a tight fitting lid to steam them a little. Takes a little longer, but it is worth it.

Use the right cookware. Great pots and pans and don’t forget to embrace the enameled Dutch oven. Heat management is key.
