I enjoyed fish tacos last night. The corn tortilla was soft but the fish was crunchy.

Sonja Henne Cookies

2 cups Butter
1 cup Brown Sugar
4 Egg yolks
4 cups Flour
1 cup of milled or finely ground Hazelnuts (traditional) or Walnuts

Mix dough, form into small balls, roll in beaten Egg White and then into Milled Hazelnuts, or Walnuts.
Press down to slightly flatten ball while in milled nuts.
Place on a grease cookie sheet.
Bake 5 minutes at 350, then take out of oven and poke a depression in the middle of the cookie and fill with Apricot or Prune Lekvar or thick red jam.
Return to oven and bake for another 5 or 6 min.
Do not let burn.

My wife isn't a Mexican either by blood or citizenship, but she lived in Mexico for a while and I have several Mexican and Central American half brothers and sisters- in -laws. But it's my step mother in-law from Baja who makes the best tortillas. Good tacos start with good tortillas. That's what I always say.
