If this is why I haven't been able to find Stilton lately, I'm gonna hurt somebody.

Apparently it's National Nacho Day - this means cheese in liquid form. But WAIT: instead of using that horrid cheese-like liquid crap from a 50 gallon drum use this: http://www.huffingtonpost.com/2014/11/0 ... mg00000063

When Cigarson comes home to Wisconsin, he heads straight to the cheese bin at the local grocery store. He grabs blocks of aged cheddar -- He says that a guy cannot get aged cheddar outside of Wisconsin, except perhaps at the specialty cheese kiosks in upscale stores. The cheddars proudly boast: "Aged 6 months."

A typical Wisconsin store has aged cheddar over by the milk & butter, in a cold cheese bin. 3-, 5-, 8-, and 10-year cheddars. They dwell alongside the pepperjack, mozzarella, farmers cheese, brick, colby/jack marble, muenster, swiss, fresh curds, etc.

Cigarson says that outland stores don't have anything like the variety found in a common Wisconsin grocer, either.

Even college-town restaurants: "I'd like a bacon cheese burger with swiss cheese, please!"
Blond waitress: "We only have the one kind of cheese." (American)

One year before I moved to Madison, there was a huge fire at a butter & cheese storage warehouse. HUGE fire. Rivers of butter and grease flowing in the streets. Took eight days to put it out.
