BBQ I Have Known

Post by UncleBob » Tue Aug 14, 2018 12:52 pm

I enjoyed a wonderful sliced brisket sammich today from Mac's BBQ here in Lubbock. It was pretty darn good! However, the green chili mac and cheese... damn.

That is all.

I had pulled pork from Dickey's BBQ for lunch. Recently discovered bitesquad and am amazed that I didn't know about this before. I'd heard of ubereats but it's not available in our area.

Depending on what part of Texas it is only a 10-20 hour drive to get some good BBQ.

We were at an art in the park deal (in CO) last weekend and there was a food truck with KCBS stickers on it. Alas, they weren't from KC. But it was still pretty good stuff. Not Q39 or Joe's good.

KCBS has a pretty good foothold in Colorado. Their contests and judges are trained under the KCBS structure and have been for over 10 years. Its not surprising to me that Colorado would have Kansas City style BBQ.

[EDIT] Looks like KCBS has been present in Colorado for at least 25 years.

My brother has sent me pictures from Mac's on his travels through Lubbock. I myself had wet brisket, ribtips, and greens at Fargo's BBQ in Bryan today for lunch.

Pecan Lodge in Dallas or Heim's in Fort Worth can remedy that. Also Hard Eight can take care of your needs.

Thanks! Hard eight is pretty close by, Pecan Lodge is 40 minutes due south of me. . . Without traffic.

If you get around to trying Heim's in Fort Worth, make sure you get the bacon burnt ends. That and the potato salad there is on a whole level higher.

God willing I'll be in KC next summer for the Chesterton Conference.
I'll have to go on a diet to prepare for it!

We slow-cooked some brisket the other night.

It wasn't Texas worthy, but it was close enough considering where I am.
