An old bird-hunting friend of mine that passed away at Christmas in 2010 had a Christmas tradition of Stilton and walnut cookies with port and a cigar. I lost his recipe in a move, and can't usually find Stilton in my area, and so I switched to bleu cheese and have tried to carry on the tradition in his memory. His recipe was very salty however, and one of my modifications was to reduce the salt.
Anyway, it's coffee this morning, with a pipe of Inns of Court. Now I'm wanting to put together a batch of bcw cookies.
