Squash for dinner!

My wife and I visited the last farmer's market today. We bought three hard squash. I HATE the yellow ones, since I was force fed them growing up. But the hard squash are sorta like pumpkin.

Cut them in half lengthwise. Scoop out the seeds. Put foil on the metal tray. Wipe olive oil on the foil and the squash. Cook them at 350 degrees for an hour, open side down. Then turn them open side up. Then squeeze sausage links into balls and fill the cavity. Then cook for another 35 minutes. Sometimes my wife uses apples and cinnamon.

We should start a support group. Anybody else's parents try to tell them spaghetti squash was just like spaghetti? Betrayal. Have you suffered the perdition of patty-pans?

My intense dislike for squash was something I fortunately outgrew in my late 30's.
Enough butter, garlic and cooking al dente remedies a multitude of squash sins.

I love squash. My Mom used to make it in a frying pan with onions. It looked almost like scrambled eggs. There are a few country restaurants that still serve it that way around here but they are few and far between.

Squash is good with butter and brown sugar. My wife makes that squash sausage deal too and it’s not bad.

I dig squash almost any way you can cook it. Our favorite is to split it lengthwise and grill it.

Squash prep around here - peel, halve, scoop/clean, quarter, steam for a few minutes - then sauté with butter/salt/pepper.

A curious thing, tonight my bride is fixing Acorn Squash stuffed with sausage, or more correctly, sausage within a hollowed Acorn Squash, the Acorn Squash being merely a vehicle for the sausage. A purely supporting role.
