What's Yer Best Cooking Secret/Advice

Post by tuttle » Wed Feb 12, 2020 12:45 pm

Here's how I cook rice.

First, rinse the hell out of it. Rinse it until you think you've rinsed it enough and then rinse it again for just as long and then rinse it a little longer than that. If in doubt, rinse it out.

After that, don't use water, use stock, bone broth, anything but just water. And when you add it to the pot be sure to cover all the rice by about a half inch of liquid. Throw some butter in because butter. Season according to taste/dish. Once boiling, turn down heat to the lowest setting and simmer with a lid for 20 mins.

No rinse. 1 cup rice to 1 1/4 cup water. Pressure cook 3 minutes.

3 minutes works? I do about that same amount-- rice to water. Pot in pot method with instant pot. My directions have it for high pressure for 13 minutes and natural pressure release. This takes a while but it comes out nicely (sticky rice).

Pre-bake yer pizza crust on a pre-heated pan/rock with no topping for the first half of the baking cycle. Add sauce and toppings then finish baking.

Chardonnay is the silver bullet ingredient for a pasta sauce - the cheaper the better! And put the shrimp in frozen. That way it doesn't overcook and get rubbery.

Also, almond extract in pancake batter. Use fresh ground whole wheat flour, best if you ground it yourself.

Yeah, I made 6 cups the other night. I didn't wait for the natural release though. I did a quick pressure release, cooked on high. Sticky rice.

[EDIT] Stirred in a full stick of butter after.

I use a rice pot and add an 1/2 onion to the top.

Heat a small amount of lard (tsp or 2) to the cast iron to bring out the flavor of hot dogs.
